If the farmer waits too long to pick it, the green buds will open up into tiny yellow flowers! Thatβs why we harvest broccoli while itβs still tight and green. After the main head is cut, the plant often grows smaller side shoots that we can eat too!
Fun Fact: Broccoli loves cool weather. If it gets too hot, it might not grow a nice big head.
